Philosophy

Clay Pigeon is dedicated to the lost art of cellar-aged wines. Wines that not only taste of place and varietals, but evolve and transform with time.  

What makes wine so special and magical is the evolution and transformation that happens: primary fruit like blackberry and cassis gives way to secondary notes of cedar, tobacco and smoke. It is true alchemy!
